The answer to this question depends upon where you stand!

In computer software, any symbol that requires one byte of storage. This includes all the ASCII and extended ASCII characters, including the space character.

For humans, a character is a symbol. Since humans are much more flexible than computers, their languages use a large number of characters. For example, Japanese has many thousands of characters. In order to represent these, computers must use 16-bits rather than a single byte.
